| Baigan ki Kadhi (Fried Brinjal Kadhi) |
Ingredients :
- 2-3 small violet brinjals - cut into thin round slices
- 1 cup beaten curd
- 2 tbsp finely chopped onion
- 1 small tomato
- 1/2 tbsp ginger-garlic paste
- 2 green chilies - slit at the end
- 1 or 2 dry red chilies
- 1/4 tsp turmeric powder
- 1/2 tsp coriander powder
- salt to taste
- 1 tsp mustard seeds
- 1/2 tsp fennel seeds
- 1/2 tsp cumin seeds
- 1 tbsp chopped coriander
To Marinate Brinjal :
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- salt to taste
- 1 tbsp rice flour
Method :
- Marinate brinjal slices with above mentioned ingredients adding little water. Keep it aside for 10 mins.
- Heat 4 tbsp oil in a pan or kadhai and fry brinjal slices till it turns golden brown and crispy. Remove from the heat and keep aside.
- Heat 1 tsp oil in a kadai and tamper mustard seeds. Add fennel seeds, cumin seeds and dry red chilies for seasoning.
- Add chopped onions and green chilies. Fry for few mins. Add ginger-garlic paste and chopped tomatoes. Saute a while.
- Add curd, turmeric powder, coriander powder and salt to taste. Mix well and cook for few mins.
- Add fried brinjal slices and little water if needed. Cook it uncovered for 8-10 mins and garnish with chopped coriander. Serve hot with rice.
