| Chettinadu Mutton Kuzhambu / Chettinadu Style Lamb Curry |
Ingredients :
Paste 1 :
- 1/2 cup chopped onion
- 1/2 cup chopped tomato
- 10 curry leaves
Paste 2 :
- 1/4 cup chopped coconut
- 1 tsp fennel seeds
- 3 cloves
- 1/4 cinnamon stick
- 2 green chilies
For Curry :
- 250 gms Mutton
- 1/4 cup chopped onion
- 1 tbsp ginger-garlic paste
- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- asofoetida - a pinch
- salt to taste
- 1 tsp mustard seeds
- 5-6 curry leaves
- 2 tbsp chopped coriander
Method :
- Pressure cook mutton pieces with 1/4 tsp turmeric powder, 1/2 tbsp ginger-garlic paste, 1/2 tsp red chili powder and little salt.
- Add 1/2 cup water and mix well and cook for 20-30 whistles if the meat is tender. Otherwise, cook for 15 whistles.
- Remove from the heat and allow to cool. Transfer the cooked mutton along with stew to a bowl.
- Prepare paste 1 and paste 2. Keep aside. Heat 2 tbsp oil in a pressure cooker. Tamper mustard seeds.
- Add chopped onions and curry leaves. Fry for few mins. Add ginger-garlic paste and saute a while.
- Add paste 1 and paste 2. Mix all and cook for few mins. Add cooked mutton, stew, remaining red chili powder, coriander powder and asofoetida.
- Mix well and cook for few mins. Add 1/2 cup water and salt to taste. Close the lid and cook it for 2-3 whistles.
- Remove from the heat and once pressure settles down, add chopped coriander to it. Serve hot with rice or idli/dosa.
